Palumara Fish Makassar!

Materials:

  1. Skipjack Fish Head (Cut to taste)
  2. 1 Turmeric
  3. 2 cloves of garlic
  4. 3 cloves of shallot
  5. 6 cayenne pepper (according to taste)
  6. 1 Tomato
  7. 1 lemongrass
  8. Basil leaves
  9. 1 std Salt
  10. ½ std sugar
  11. Orange Leaves
  12. 1 std of lime juice
  13. Tamarind / starfruit wuluh
  14. Water

How to make :

  1. Blend turmeric, cayenne pepper, onion and garlic.
  2. Saute the ingredients which have been crushed, then add the basil leaves and lemongrass. Saute until fragrant
  3. Add enough water.
  4. Add a little tamarind/starfruit wuluh that has been cut into pieces
  5. Add the tomato slices to the stirred water.
  6. After boiling, add the tuna fish head pieces wait for 8 – 10 minutes.
  7. Then add the lime juice.
  8. Add salt and sugar.
  9. Taste to ensure taste, then lift and serve.
